The Tasting Menus
Two tasting menus run daily. Tasting Cuzco at £45pp is the shorter journey through the menu, built around the dishes that define the kitchen. Tasting Machu Picchu at £59pp is the fuller experience, more courses and more of the premium plates. A vegetarian tasting menu is available on request. Both are designed to share the same sense of occasion as an omakase counter, without the formality.
What To Expect From the Experience
Each menu is a sequence, paced by the kitchen: bright ceviche and tiradito to open, sushi and sashimi from Head Sushi Chef Sandesh Baral, robata skewers and warm Nikkei plates through the middle, and dessert to close. Head Chef Igor Pereira builds the order so flavours land in the right sequence. It is a proper dining experience rather than a list of dishes, ideal for date night, a celebration or anyone who wants the kitchen to take the wheel.
Sushi and Courses
Sushi runs through both menus, cut to order and seasoned in the Nikkei style. Around it sit the ingredients that make this cuisine distinctive: aji amarillo, tiger's milk, miso and yuzu. Every course is plated to share and paced so the table eats together.
